Sichuan cooking taught at the provincial institute, not a hotel kitchen
You learn on the school's own gas, which is the actual lesson. Heat control on a commercial wok burner is the thing no home kitchen or hotel demonstration teaches, and it is where students fail: burnt tofu, chicken that never seared.
Picture your day
The Sichuan Higher Institute of Cuisine in Chengdu is the province's main professional cooking school and has hosted English-language courses for foreigners, historically a two-week programme designed with Fuchsia Dunlop's input off her own study there. The day runs in two halves: a morning demonstration by a master chef with a senior student assisting and an interpreter, covering three dishes, then an afternoon hands-on session on commercial wok burners cooking the same three dishes while the chef and assistants correct you.
The access, explained
This is a professional school teaching outsiders, which is genuinely different from the tourist product, but do not confuse it with credentials. Several Chengdu operators hand out a Cooking Master Certificate or a Master of Chuancai certificate, issued by a cuisine museum or a hotel, that has no standing outside the business that printed it, and one hotel bundles one with a market walk, a meal and a beer for around USD 70. We could not confirm that the institute itself issues any recognised credential to short-course visitors, and we could not confirm the current status, length or price of the foreigner programme: the detailed accounts we found date from 2010 and 2013.
Planning the details
How to arrange it. Contact the institute directly to ask what is currently running, and expect to need a Chinese-speaking intermediary. Note there are two campuses: the newer one is about two hours outside Chengdu, the older city campus about thirty minutes from central lodging, and which one you are sent to changes the shape of your day.
Ask for written confirmation of the date, duration, guide language, transport, admission and cancellation terms. Any restricted access must be confirmed by the venue.

Good to know
If you want four fun hours and a photograph, book a half-day class and do not pay extra for the certificate. If you want to cook Sichuan food properly afterwards, the school is the real thing, with two caveats from past students: interpreters struggle with technical cooking vocabulary, and there is less tasting and feedback on your own dishes than a keen amateur wants. Confirm the programme exists before you build a trip around it.
