A taste of Pingyao

Dong's Fried Wantuo

董记炒碗托

A single-dish shop on Yamen Street doing Pingyao's own snack: buckwheat batter steamed in a shallow bowl until it sets, then turned out, cut up and either dressed cold or fried on a griddle with egg, garlic chives and chilli. The fried version is the one to get and the one most visitors never try because they only meet the cold version on a restaurant cold-dish plate.

Why come here

A place worth making time for

The best-known wantuo specialist in Pingyao, widely cited in Chinese guides and local television coverage; wantuo is counted among Shanxi's ten signature foods. No formal award.

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Griddle-fried wantuo (炒碗托)
  • Cold-dressed wantuo with garlic and vinegar (凉拌碗托)
  • Wantuo with egg (鸡蛋炒碗托)

What it actually tastes like

Buckwheat gives it a grey colour and a faintly bitter, earthy taste, and the set texture is springy and slightly slimy. The cold version is heavily garlicked and sharply vinegared.

Allergens in this kitchen

gluten/wheateggsoysesame

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
