A taste of Chengdu

Fu Rong Huang

芙蓉凰

A third-floor Sichuanese dining room on Guanghuacun Street where the tables are screened from each other by wooden slatted partitions and private rooms are available. The kitchen team are veterans working through the traditional Sichuan repertoire - the dishes that take real knife work and real wok control rather than a shortcut through chilli oil. It is the best-value one-star on this list and the one where you will eat the most recognisably Sichuanese food.

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Sautéed pork liver with chilli (火爆肝腰)
  • Fu qi fei pian, sliced beef offal in chilli oil (夫妻肺片)
  • Twice-cooked pork (回锅肉)

What it actually tastes like

Properly 麻辣 málà. Fu qi fei pian is cold sliced beef offal - tongue, tripe, heart - under chilli oil, ground peanut and a heavy dose of Sichuan pepper; the 火爆肝腰 is liver and kidney cooked in seconds over ferocious heat. Offal, bones and whole dried chillies are normal here.

Allergens in this kitchen

sesamepeanutsoygluten/wheatfish

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
