A taste of Chengdu

Long Sen Yuan (Qingyang)

龙森园火锅

A no-frills hotpot house on Qintai Road that has run the same single-item menu for more than twenty years: old-Chengdu hotpot, nothing else. What stops it being monotonous is the choice - eighteen soup bases, a wall of dipping sauces, and a long list of meat, offal and river and sea fish. The famously good order is Emei eel cut into pencil-width strips, crisp and juicy out of the broth. It is the one hotpot in Chengdu carrying a MICHELIN distinction, and a far better bet than the big neon chains (蜀九香 Shu Jiu Xiang, 小龙坎 Xiaolongkan, 电台巷 Diantaixiang) that visitors usually get steered towards.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Emei eel strips (峨眉鳝丝)
  • Spicy rabbit loin (麻辣兔腰)
  • Herbal mala broth with celtuce (药膳麻辣锅配莴笋)
  • Brown sugar glutinous rice cake (红糖糍粑)

What it actually tastes like

Full-strength 麻辣 málà: a thick layer of beef tallow and whole 花椒 on top of the red broth. Offal is the heart of the menu - tripe, duck intestine, pig brain, blood curd. Ask for a 鸳鸯锅 yuānyāng guō, the split pot, and half of it is a mild clear or fish broth you can retreat to.

Allergens in this kitchen

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
