A taste of Chengdu
Lao Chengdu Yi Cheng Xian San Yang Mian
老成都一诚鲜三样面
Old-style Chengdu noodle counter doing the classic 'three toppings' bowl — a good cheap introduction to local noodles.

What to order
Point at the Chinese. Staff will understand it even where the menu has no English at all.
- The 'old' dry-tossed noodles with spicy minced pork and diced green beans (老三样·干拌面)
- Dan dan noodles (担担面)
- Soup noodles from the trio menu (汤面)
What it actually tastes like
A dry Chengdu noodle bowl arrives with the sauce at the bottom; you toss it yourself or it tastes of nothing. Sichuan pepper is ground in raw, so the numbing 麻 is sharper here than in a slow-cooked dish. Preserved vegetable and ya cai give a fermented, slightly sour edge.
Allergens in this kitchen
This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
