A taste of Chengdu

Rongrong Beida Pugaimian

蓉蓉北大铺盖面

A cheap neighbourhood shop in Jinniu known for pugaimian — "quilt noodles" — hand-torn sheets of dough dropped straight into broth, so they come out thin, soft and with real chew. It is a Sichuan comfort food that rarely appears in English-language guides, and a useful break if two days of chilli oil have caught up with you.

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Flat torn-sheet noodle soup (铺盖面)
  • Pea and minced pork topping (豌豆杂酱)
  • Beef topping (牛肉铺盖面)

What it actually tastes like

Milder than most of this list, which is the point. Order it in the soup version rather than dry if you want a genuine rest from Sichuan pepper, and ask for 清汤 (qīng tāng, clear soup).

Allergens in this kitchen

gluten/wheatsoysesameegg

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
