A taste of Datong

Datong No.7 Middle School Knife-cut Noodles

大同七中刀削面

A neighbourhood noodle shop named, as several Datong noodle institutions are, after the school it grew up outside. It is the kind of place where the noodle cutter works a dough block strapped to his forearm in the window, and it is worth stopping just to watch that even if you are not hungry.

Why come here

A place worth making time for

A long-standing neighbourhood knife-cut noodle shop known by local name recognition rather than any ranking.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Knife-cut noodles with braised pork (猪肉刀削面)
  • Pork cutlet knife-cut noodles (过油肉刀削面)
  • Cold shredded tofu skin (拌豆腐丝)

What it actually tastes like

Vinegar-forward. Broths are mutton or pork based and quite salty.

Allergens in this kitchen

gluten/wheatsoy

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
