A taste of Inner Mongolia

Deshunyuan

德顺源

A century-old Hohhot shaomai brand and probably the city's most commercially successful one, to the point that it opened a branch in Ikebukuro in Tokyo. The Hohhot branches are bright, efficient and the least intimidating entry point to the brick-tea-and-shaomai breakfast ritual.

Why come here

A place worth making time for

A Hohhot century-old shaomai brand (百年老字号) that has expanded internationally, including a Tokyo branch opened in April; no graded award.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Mutton and spring onion shaomai (羊肉大葱烧麦)
  • Brick tea (砖茶)
  • Mutton offal soup (羊杂碎)

What it actually tastes like

Rich mutton fat, translucent slippery wrappers, raw spring onion heat. Vinegar on the side is standard.

Allergens in this kitchen

gluten/wheatsoy

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
