Fuxian Small Pot Rice, Yunnan Folk Restaurant

浮娴小锅饭·云南民俗风味餐厅

A Yunnan folk-style restaurant in Shuhe, the quieter old town eight kilometres north of Dayan, serving small clay pots of rice cooked with cured meats and mushrooms alongside Naxi dishes. Shuhe is a better bet than Dayan for an unhurried dinner and only slightly cheaper.

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

What it actually tastes like

Mild by Yunnan standards. Cured meats are salty; the rice crust at the bottom of the pot is intentional and the best part.

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.

Cured Pork Rib Hotpot 腊排骨火锅Deeply savoury and salty-meaty rather than spicy, with a clean soup and meat that falls off the bone; the dipping sauce beside it carries the chilli.
