A taste of Suzhou

Wei Ji Ao Mian Guan (East Baita Road)

伟记奥面馆

A small, clean noodle shop near the Pingjiang quarter serving aozao noodles — a Kunshan speciality now listed as intangible cultural heritage, built on a long-simmered red broth with the noodles cooked firm and the topping added on. Suzhou's noodle culture is the thing locals are most quietly proud of, and this is the cheapest good introduction to it.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Aozao noodle soup in red broth (奥灶面 / 红汤)
  • Fried eel strips as the topping, the most popular choice (爆鱼 / 鳝丝浇头)
  • Braised pork or duck topping (焖肉 / 卤鸭浇头)

What it actually tastes like

The red broth is sweet as well as savoury — a shock if you expect a salty noodle soup. Eel is the signature topping. The toppings sit on top rather than in the broth, and locals often ask for them on a separate plate (过桥) so they do not go soggy.

Allergens in this kitchen

gluten/wheatfishshellfishsoysesameegg

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
