Why come here
A place worth making time for
Known as Xi'an's definitive hulutou (pig-intestine paomo) house, trading since 1920; commonly cited as a China Time-Honoured Brand, which we have not confirmed from the government register.

What to order
Point at the Chinese. Staff will understand it even where the menu has no English at all.
What it actually tastes like
This is offal, and it tastes like it: hulutou is pig large intestine and tripe in a pale, fatty, faintly funky broth. Pepper-forward rather than chilli-forward. Not halal and emphatically not for anyone squeamish about organ meat - but the cleaning is meticulous and the funk is mild compared with what visitors fear.
Allergens in this kitchen
gluten/wheatsesamesoyfish
This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
