A taste of Chongqing

Pei Jie Lao Huoguo (Jiaochangkou flagship)

珮姐老火锅(较场口总店)

The house most often credited locally as the ancestor of the nine-grid pot, with a lineage its own telling traces to a Republican-era tripe hotpot stall run by a woman known as Pei Jie near Jiaochangkou. It has since grown into a national brand with branches including one inside Chongqing Raffles City, but the Yuzhong flagship is the one to eat at. It is busy, touristed and photographed constantly, and it is still a genuinely good beef-tallow pot. Understand what the nine-grid is before you order: it is ONE shared broth under a cast-iron grid dividing the surface into nine cells, not nine different soups. The cells differ only by heat convection. The centre square (中心格) is the hottest and rolls constantly, and is for things that cook in seconds - tripe, duck intestine, kidney. The four edge cells (十字格) are medium and take meat and fish. The four corners (四角格) are the gentlest and are where you leave blood curd, tofu and potato to simmer slowly. Put potato in the centre or tripe in a corner and you ruin both.

¥120–150 per person≈ US$18Repeatedly named in Chongqing municipal 'locals' favourite' hotpot rankings; widely reported as a Dianping must-eat list regularYuzhong district, Jiaochangkou area. Metro station not confirmed.

Why come here

A place worth making time for

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Fresh beef tripe (屠场鲜毛肚)
  • Big-knife pork kidney slices (大刀腰片)
  • Fresh duck intestine (鲜鸭肠)
  • Celtuce-stem meatballs (贡菜丸子)
  • Shrimp paste with fish roe (鱼籽虾滑)

What it actually tastes like

The broth is beef tallow (牛油, niuyou - solid rendered beef fat, not butter; it sets into a firm block when it goes cold) cooked out with mountains of dried chilli, 花椒 Sichuan pepper, broad-bean paste and ginger. Two separate sensations are at work: 辣 (la) is the chilli burn, 麻 (ma) is the buzzing electrical numbness of the 花椒, and 麻辣 is both at once. Chongqing's version is oilier, saltier and far more numbing than Chengdu's. A deep layer of liquid fat sits on top and keeps everything scalding for a full minute after you lift it out, which is how visitors burn their mouths. The menu is built around offal - tripe, duck intestine, kidney, aorta, duck blood curd - and the pleasure is texture, not tenderness. A 鸳鸯 'mandarin duck' split pot or a 清汤 clear broth can be asked for here, but even 微辣 'mild' in Chongqing is hot by outside standards.

Allergens in this kitchen

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
