What it actually tastes like
The fish is cooked whole with scales and skin on and the skin is meant to be eaten — this is the single biggest surprise for foreign diners. Lots of small bones. Stuffed snails are river snails with the meat picked out, minced with pork and mint, and pushed back into the shell; you suck them from the shell.
