A taste of Hangzhou

Longjing Manor (Dragon Well Manor)

龙井草堂

A walled Chinese garden of stone bridges and ponds down a lane off Longjing Road, deep in the tea hills, with only eight private rooms and no public dining hall. The kitchen is built around obsessive ingredient sourcing and poetically named Jiangnan dishes, and the meal opens with soy milk made that morning, sweet or savoury, with small side dishes. This is the closest thing Hangzhou has to a food pilgrimage, and it feels nothing like a restaurant.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Double-boiled duck soup with cordyceps flower (虫草花炖鸭汤)
  • Freshly made soy milk with side dishes (现磨豆浆配小碟)
  • Seasonal Jiangnan river fish (江南时令河鲜)

What it actually tastes like

Quiet, restrained cooking rather than big flavours, and some diners find it under-seasoned on first taste. Expect freshwater fish served whole with bones in, offal and preserved vegetables as a matter of course, several cold or room-temperature courses, and no chilli at all.

Allergens in this kitchen

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
