A taste of Hangzhou

Wu Zi Mian Guan

吴字面馆

A small noodle shop on Huansha Road that opened in 2017 and has become the most talked-about bowl in the old city, run by a trained chef rather than a family operation. It does Hangzhou noodles both ways, in broth or dry with sauce and toppings, and the toppings are the point. Ten minutes from the lake and the cheapest Michelin-recognised meal you will eat in Hangzhou.

Why come here

A place worth making time for

MICHELIN Bib Gourmand 2026 (MICHELIN Guide Shanghai, Jiangsu & Zhejiang 2026, Hangzhou selection).

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Pork kidney and liver noodles (腰肝面)
  • Noodles with shrimp and eel (虾爆鳝面)
  • Pian er chuan noodles (片儿川)

What it actually tastes like

The house dish is offal: pork kidney and liver, browned hard on the outside and left juicy inside, with the faint mineral taste that comes with it. Eel is freshwater with fine bones and a sweet soy glaze, and the pickled-greens broth is sour and fermented by design. Mild throughout.

Allergens in this kitchen

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
