A taste of Shanghai

Taian Table

泰安门

Chef Stefan Stiller's restaurant, open since 2016 and now Shanghai's only three-star kitchen. Guests sit at a counter around an open island and watch the whole meal being cooked. The format is a ten- or twelve-course set menu that changes every few weeks, German technique bent towards Asian flavours such as kimchi and curry. It is the single most ambitious meal in the city and the hardest table to get.

Why come here

A place worth making time for

Michelin three stars 2026 (Shanghai) for innovative cuisine.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Ten- or twelve-course tasting menu (十道或十二道品鉴菜单)
  • Wine pairing from the house list (侍酒师配酒)

What it actually tastes like

Fermented and pickled notes recur throughout, and the kitchen uses raw and lightly cured seafood. Because the menu is fixed and changes constantly, the allergens above are a realistic worst case rather than a dish list; declare restrictions when you book and the kitchen will work around them.

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
