A taste of Suzhou
San Xing Yang Rou Guan
三星羊肉馆
A mutton house of the Cangshu tradition from Wuzhong district, the one Suzhou food that has nothing to do with sugar and river fish. Cangshu mutton is goat, stewed in tall fir-wood tubs — nearly a metre high, called pentang locally — so the timber scent soaks into the meat. It is strictly a cold-weather food: the Wuzhong goat market's slaughter volume jumps roughly fifty per cent from September to October as the season opens.
