A taste of Kunming

Jianxinyuan Crossing-the-Bridge Rice Noodles (Baoshan Street main shop)

建新园过桥米线(宝善街店)

The original branch of the restaurant that Kunming treats as the benchmark for crossing-the-bridge rice noodles. It traces its founding to 1906 under the name Sanhechun, was renamed Jianxinyuan after the 1952 reorganisation, and is described as a China Time-honoured Brand. It still queues out of the door, with people eating off stools on the pavement. Its own signature is not the classic version but cuiwang mixian, built on crisp pork crackling, five-spice tofu and set pig's blood.

Why come here

A place worth making time for

No. 16 on Ctrip's Kunming must-visit food list, rated 4.5. Reported as a China Time-honoured Brand (中华老字号) founded 1906; I could not confirm the brand registration on the Ministry of Commerce register itself.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Crossing-the-bridge rice noodles (过桥米线)
  • Crisp-pork and blood-cake rice noodles (脆旺米线)
  • Five-spice tofu side (五香豆腐)

What it actually tastes like

The ritual is the point and nobody explains it: the broth arrives alone under a film of oil that keeps it near boiling, and you add the raw ingredients yourself in order — quail egg and raw meat slices first so they cook, then tofu skin and the cooked toppings, then the vegetables, then the noodles last. Get the order wrong and you have raw pork in warm soup. Set pig's blood is standard in the house version; say so if you want it left out.

Allergens in this kitchen

eggsoygluten/wheatsesamefish

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
