A taste of Xiamen

A Xi Xia Mian

阿西虾面

Old-town prawn noodle shop, nearly a century old, near the Bashi market area. The broth gets its depth from whiskered velvet shrimp heads and shells that are toasted, pounded and slow-cooked for four hours. A lighter, seafood-sweet alternative to sacha noodles.

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Prawn noodles (虾面)
  • Prawn noodles with pork (虾面加肉)

What it actually tastes like

Intense shrimp-shell stock. Whether sacha or peanut is added to the bowl is unconfirmed; do not assume it is peanut-free.

Allergens in this kitchen

shellfishgluten/wheat

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
