A taste of Xiamen

Lai Cuo Cheng Bian Shi

赖厝埕扁食店

A bian shi shop dating to the 1940s, when the founder sold dumplings from a bamboo-pole kitchen; now run by her son and still hand-wrapped. Signature is shrimp bian shi soup with springy noodles dressed in peanut and fermented-tofu sauce, near the old Bashi market.

The house favourites

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Shrimp bian shi soup (鲜虾扁食)
  • Noodles in peanut and fermented-tofu sauce (花生腐乳拌面)

What it actually tastes like

Peanut sauce is a signature, so avoid if peanut-allergic. Fermented tofu is salty and pungent.

Allergens in this kitchen

peanutshellfishsoygluten/wheat

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
