A taste of Zhangjiajie

Yinxiang Ni Yan (Xibu Street branch)

印象鲵宴·张家界地标美食名片(溪布街店)

A Wulingyuan banquet restaurant on the Xibu Street bar lane whose signature is giant salamander, farmed and served as a hotpot or stewed. It is heavily marketed as a Zhangjiajie speciality. Be aware that the Chinese giant salamander is a protected species in the wild and only certified farmed animals may legally be sold — foreign visitors uncomfortable with that should order something else here, and there is a full Hunan menu alongside.

¥85 per person on the general menu; salamander is charged separately by weight and can run to several hundred yuan≈ US$13Ctrip Zhangjiajie list No. 2Xibu Street (溪布街), Wulingyuan District

What to order

Point at the Chinese. Staff will understand it even where the menu has no English at all.

  • Farmed giant salamander hotpot (娃娃鱼火锅)
  • Xiangxi cured meat platter (湘西腊味拼盘)
  • Rock-ear stewed chicken (岩耳炖鸡)

What it actually tastes like

Salamander is gelatinous and very fatty, closer to eel skin than fish. The whole animal including skin goes into the pot. Prices for it are per jin and high — confirm the weight and total before it is killed and cooked.

Allergens in this kitchen

fishsoygluten/wheat

This is the kitchen, not one dish. Woks, fryers, blanching water and utensils are shared in almost every Chinese restaurant, so for a serious allergy treat the whole premises as the unit rather than ordering around it.
